Smaller version of the soup is as follows, approximately lol HEARTY TURKEY BARLEY SOUP
- 2-3 cups of turkey pc’s left over from Christmas
- 2 cups of water
- 4 cups of chicken/turkey broth or equal of water with bouillon cubes
- 28 oz tin of diced tomatos
- 10 oz tin of tomato soup (no extra water needed)
- 3 celery stalks diced
- 1 med/lge onion diced
- 3 carrots sliced
- ½ bag of spinach
- 8 T barley
- ½ t thyme
- 1 bay leaf
- Clove or so of garlic
- Extra chicken bouillon cubes if needed for flavour
Toss all of above in a pot and simmer until veggies are tendor and the barley is cooked. The barley when cooked will thicken and give a nice consistency to the soup.
