Smaller version of the soup is as follows, approximately lol   HEARTY TURKEY BARLEY SOUP

  •  2-3 cups of turkey pc’s left over from Christmas
  • 2 cups of water
  • 4 cups of chicken/turkey broth or equal of water with bouillon cubes
  • 28 oz tin of diced tomatos
  • 10 oz tin of tomato soup (no extra water needed)
  • 3 celery stalks diced
  • 1 med/lge onion diced
  • 3 carrots sliced
  • ½ bag of spinach
  • 8 T barley
  • ½ t thyme
  • 1 bay leaf
  • Clove or so of garlic
  • Extra chicken bouillon cubes if needed for flavour

 Toss all of above in a pot and simmer until veggies are tendor and the barley is cooked.  The barley when cooked will thicken and give a nice consistency to the soup.
